Beer school – Brewing with Paul Dickey

For beer school we spend a morning with Paul Dickey at Black Oak Brewery and helped him brew his Pale Ale. Paul Dickey has been brewing since 1986. Recently he has brewed at Black Oak and continues brewery daily. He is a  Master Judge within the Beer Judge Certification Program (BJCP). He’s a well known Brewer and Canada and he’s the one who created Mill Street’s Coffee Porter.

A few technical things about Paul’s Pale Ale we brewed:

  • North American pale malt, flaked barley and crystal malt
  • Hops included were Centennial, Cascade and Northern brewer
  • 38.9 IBU’s

This beer will be available in a few weeks, most likely the Clock and Dagger on College. Can’t wait to try it!
